all day long, i knew that it was saturday. but for some reason, i thought that tomorrow was monday. as i was making dinner, i was talking to my brother on the phone. he asked what i was cooking, and i told him that i was making a pizza and salad for dinner and i was throwing together a breakfast fritatta. "so much for 'pancake sunday'", he exclaimed. it threw me off because, in my mind, tomorrow was monday. oops. so this week's 'pancake sunday' is now going to be 'fritatta sunday.' funny thing is, as i was picking up the potatoes today, i also bought the blueberries for the pancakes. oh well, maybe we will have breakfast for dinner tomorrow... unless i decide to grill out (i'm thinking salmon skewers, baked sweet potatoes and salad).

i am thrilled to be able to cook again. today was magnificent because c was tending to the boy. i love love LOVE to cook. i love planning menus and i love shopping for ingredients and i love creating recipes. i don't particularly care for the cleaning up part, however ;-)

ReplyDeletespray a baking dish w/pam
cover bottom w/hash browns (frozen or thawed)
in a dish, whisk about a dozen egg whites and one whole egg and @2 tablespoons milk- to that add whatever seasonings you'd like- i put in cracked black pepper, garlic powder, red pepper flakes
to the egg mixture, add whatever veggies, meats and cheese that you would enjoy... for this one, i used turkey sausage, mushrooms and 2% cheddar cheese
pour on top of hash browns and mix
bake covered at 400 for about 25 minutes
when serving, you can serve w/salsa, sour cream, sausage gravy, whatever
